Why Nude Mandoo?
Mandoo is basically a Korean dumpling. Nude mandoo is exactly what it sounds like. It is a dumpling without the wrapper. I chose this recipe for people with FGIDs because this food is a way to enjoy a staple of Asian cuisine without worrying about fructans in wheat flour, which is commonly used in making dumpling wrappers. This is great for those days your stomach is feeling weak and you want a pick-me-up that is not plain, old grits and toast. It’s the perfect meal for those sick and rainy days!
Here are the steps and ingredients needed to make nude Mandoo!

Ingredients:
For the stuffing:
Ground pork/chicken
Washed & squeezed and chopped kimchi1
Spring onion (Green part)
Sesame seeds
For the broth:
Dashi pack2 (includes dried kelp, anchovies, Shiitake mushrooms) OR Chicken broth
Ground black pepper
Soy sauce or salt for seasoning
Because kimchee is made with a considerable amount of garlic and onion, it is not considered low FODMAP. However, you can substitute kimchee with radish, or use kimchee that does not contain garlic. You can get this at your local asian mart, or you can use just fish sauce as a low FODMAP alternative.
THE STEPS
The stuffing:
Mix together ground meat, kimchee, spring onion, and sesame seeds in a large bowl. This mixture can make up three batches, allowing you to store leftovers in the fridge for easy-making.
The dish:
Boil 2-3 cups of water or chicken broth in a medium pot on high heat. If you used water, put in the dashi pack to boil and infuse the water.
2. Once it boils, turn it down to medium heat and wait for 5 minutes before taking the pack out. While you are waiting, you can prepare the mandoo.
3. Roll the stuffing into bite-sized pieces or circles.
4. Once you have taken the dashi pack out, put the mandoo in the pot.
5. Wait for the mandoo to float. Once they float, just wait for 2-3 more minutes, especially because you are handling pork or chicken.
6. Now, serve with the broth! You can sprinkle salt or season with soy sauce and black pepper to your liking!
